You will never run out of noodle options in Hong Kong. There are cart noodles where you pick the toppings, wonton noodles with bouncy noodles and plump dumplings, and beef brisket noodles with tender pieces of beef.
Speaking of the last one, a popular spot for it is Sister Wah Beef Brisket. Located in Tin Hau, this establishment specializes in beef brisket in clear broth. It’s founded in 2003 by the late Chan Yee Wah, a.k.a. Sister Wah, and is now managed by his sons.

Sister Wah (the restaurant) uses freshly butchered beef instead of frozen beef, as Sister Wah (the founder; see what I did there? LOL) has always insisted. The beef is prepared and simmered with aromatics until its tender.

The beef brisket specialist is a MICHELIN Bib Gourmand awardee since 2014 until today, 2026. But is it worth the award? Let me give you my thoughts.

I got the Beef Brisket, Tendon & Tripe noodle. I had options of having it either in soup or dry (“stir noodles”) option. I chose the latter, which costs HKD130! I don’t know why the dry version is more expensive (the soup version is only HKD110, but still expensive).

So how was the brisket? Frankly, it’s not as tender as I expected it to be. The tendon was chewy, which was odd.

Surprisingly, the tripe was the star of the show. It’s perfectly soft and is not gamey at all.

The soup was clear and comforting. It’s also slightly sweet, was on the plain side, and has a strong spring onion flavor. Thankfully, there are condiments on the table.

I’m supposed to have egg noodles. I even showed a picture of it to the waitress. But the waitress gave me thin rice noodles instead. But I didn’t complain because the noodles are al dente, which is how I wanted it to be.
By the way, the customer from the other table plainly said “egg noodles” in English to the waitress. I should’ve ordered in English than pointed to a picture in my phone. LOL.
It’s also served with two stems of what I think is Chinese broccoli or kale, which is crisp and french. You really can’t go wrong with the veggies of Hong Kong!

Oddly, there is something so comforting about the dish that made me eat it and finish it.
Let me say this: I think Sister Wah Beef Brisket is overrated and overpriced. Maybe I just went on an off day. But even if they serve the best version of their brisket noodles, it’s still too expensive. So in other words, I can’t recommend it to you, as I believe there are better and cheaper beef brisket noodles shops in the city.
