Angeles City (Pampanga) is home to many legendary restaurants and world-class chefs, and is also the birthplace of a Filipino favorite—Sisig, a Kapampangan dish made of chopped pig parts and chicken liver. One of the popular carinderias (eatery) that you can visit in Angeles is Batcha-Batchang Lutong Ulam. which literally translates to “basins and basins of cooked dishes”.

The Basins of Food

Founded in the late 80s, Batcha-Batachng Lutong Ulam is known for their delicious home-style food displayed in large basins (similar to the ones used for laundry) instead of the usual chafing dishes or food warmers. That means that they serve a lot of food, which still run out fast.

Batcha-Batchang Lutong Ulam serves both Filipino and Kapampangan food. These are the dishes we’ve tried so far:

  • Beef Lengua (beef in cream sauce): This can be misleading because there is no lengua (cow tongue). Still, the beef is tender and the sauce is creamy.

  • Chicken Pineapple: It has tender chicken in sweet and tangy sauce.

  • Chopsuey (stir-fried vegetables): The veggies are crisp.

  • Ham Casserole: It has chunks of lightly sweet ham in creamy sauce. The quail eggs add creaminess to the dish. I thought I wouldn’t like this dish but I did.

  • Kilayin (Kapampangan dish pork and liver stewed in vinegar and spice): I’m not a fan of their version because there’s a weird, funky taste.

  • Lechon Kawali (deep-fried pork belly): It’s crunchy and bursts with juices. This is easily our favorite!

  • Lechon Paksiw (roast pork stewed in liver sauce and vinegar): It’s made of their lechon kawali but in sweet liver sauce.

  • Sisig: It’s smoky and has a nice acidity. The red onions add crunch. This is also my favorite here!

  • Spareribs Caldereta (tomato-based stew): It has tender pork and spicy sauce.

Batcha-Batchang Lutong Ulam is one of the best carinderias I’ve ever tried not just in Angeles City but even in the entire country. The food is delicious and affordable (we even brought home a lot of food to be eaten for several days). I highly recommend it to you!
