Pando’s Eatery and Fernando’s Kambingan: This Carinderia (Eatery) in Quezon City Specializes in Goat Dishes
I love kambing (goat) dishes. I love it when it’s prepared as Kaldereta (in tomato stew), Kilawin (it’s like Filipino-style of ceviche), or Papaitan (in a soup made bitter with bile). But it’s not easy to find a kambingan (literally “goat place”) in Metro Manila. Thankfully, I found out about Pando’s Eatery and Fernando’s Kambingan in Quezon City.

Located in Santa Mesa Heights, Pando’s Eatery and Fernando’s Kambingan is a carinderia (eatery) that offer home-style Filipino food and specializes on goat dishes. Like other carinderias, they employ a turo-turo (literally “point point”) style of ordering, where customers choose their ulam (viand) by pointing at it (typically placed in food warmers).

Let’s talk about the food, starting with the goat dishes. One is Kalderetang Kambing, which has tender meat and a nice tomato flavor. Just beware of the bones.

Another goat dish is the Kilawing Kambing. Honestly, it’s not the best version because I find it a bit gamey.

We also tried other Filipino dishes such as the Lechon Kawali (deep-fried pork belly). It’s tender, fatty, and a crunchy skin. It could use some salt but is easily remedied by the sauces.

The Kinilaw na Tanigue (Filipino-style mackerel ceviche) has fresh fish and vegetables to add texture, marinated in vinegar. It also has carrots, which is my first time to try in a kinilaw.

Unfortunately, the Papaitan was already sold out when we arrived. So I’m hoping to try it one day.
