Rebel Bakehouse: The Best Patisserie in Baguio City!

Whenever I travel to a city, I always try to visit its most popular bakery or patisserie. So when we were in Baguio City, we visited Rebel Bakehouse.

Rebel Bakehouse

Rebel Bakehouse has an interesting story. It was started by non-bakers (thus, “rebels”) during the COVID-19 pandemic in 2020 as a cloud bakery. These “rebels” were serving made-to-order pastries to friends and family a few days a week until they opened to the public in 2022.

When we went there first, it was on a late afternoon so most of the pastries, especially the sweet ones, were already sold out. But we were still able to try their Butter Croissant and Ham & Gruyère.

Both are buttery and flaky, and the gruyere has the right sharpness.

Their signature Cereal Milk Latte wasn’t available as well. So I just got the Dirty Chai Latte, which has nice flavors coming from the spices (I believe there’s cardamom in it).

Although the pastries and the coffee are good, I wasn’t satisfied with our first visit. So we went again a second time, even braving the Maundy Thursday tourist crowd. But to our surprise (the Rebel staff was surprised, too), it wasn’t crowded.

We finally got to try their sweet pastries, such as Leche Flan Danish, Mixed Berries Twist, and Twice-Baked Almond.

I like the Leche Flan Danish, because its flan has the right sweetness, and Mixed Berries Twist, because its berries are tart.

But my favorite is the Peach Mango Pie. The pastry is crisp and flaky, the flavor is like Jollibee’s Peach Mango Pie (which I super love) but way better, and the artwork is beautiful. Bravo to Rebel for this creation!

Also, I finally got to try the Cereal Milk Latte, in which the milk is soaked with cereals. I like the crunch that that the cereal toppings give.

Rebel Bakehouse, I believe, is the best patisserie in Baguio City. Honestly, I haven’t tried other patisserie in the City of Pines but that will not stop me from recognizing them! LOL. Kidding aside, I think it’s also one of the best in the entire country. With that said, I highly recommend Rebel Bakehouse to you.

P.S. As of this time of writing, Rebel Bakehouse has a pop-up (in collaboration with Yardstick Coffee) at Greenbelt 3 mall in Makati City. It’s at the fourth floor (same floor as the cinema) and will be there until June 1.

P.P.S. They will be opening a commissary and cafe in Maginhawa Street in Quezon City. So no need to go up to Baguio for their flaky pastries!
