Ang Kalderetang Itik ng Bagong Ilog: This Carinderia (Eatery) in Pasig City Specializes in Its Namesake Duck Dish
It’s uncommon for a carinderia (eatery) to serve duck dishes. In fact, I think it’s even easier to find carinderias offering goat dishes. But one eatery in Pasig City specializes in one duck dish—Ang Kalderetang Itik ng Bagong Ilog.
The name translates to “the duck kaldereta of Bagong Ilog” (Bagong Ilog is an area in Pasig City). To the uninitiated, kaldereta (or caldereta) is a Filipino stew composed of a protein (typically beef, goat, and pork), vegetables (like bell peppers, carrots, and potatoes), tomato base, and…drumroll…liver spread. Some recipes even add cheese, olives, and sausages.
Ang Kalderetang Itik ng Bagong Ilog started in 1987. Today, it’s run by the second generation, who safeguards their kaldereta recipe (only family members can concoct the “timpla” or blend/mixture). They serve a whopping 40 ducks per day!
So how do I find their Kalderetang Itik?
It has tender duck meat covered in sweet and spicy sauce. It’s also bony and has a bit of gaminess, but that’s expected. Overall, I think it’s a good dish!
But what stands out more, for me, is the Dinakdakan, an Ilocano dish made up of different pig parts that are boiled, grilled, chopped, and dressed.
It has a nice acidity, with a kick from the green chilies, crunch from the onions, and creaminess from the liver.
They also serve other Filipino dishes, which I believe rotates throughout the week.
I also love their Sinigang na Baboy (pork in sour soup). The broth is rightly sour and salty, while the meat is super tender. I just wish that the veggies are crisper.
You also can’t go wrong with their Inihaw na Liempo (grilled pork belly). It’s tender, fatty, rightly sweet, and perfectly charred.
The Pork Asado (braised pork) has a nice tomato flavor and sweetness. Some meats are tender, while others use more tenderness.
