Aling Mameng Original Liempong Bocaue: This Roadside Stall in Bocaue (Bulacan) Sells “Sinuso” or Deep-Fried Pig Mammary Glands

I thought I’ve tasted every part of the pig, including its innards. But I realized that I haven’t tried its suso or mammary glands. In the municipality of Bocaue in the province of Bulacan, this is actually a delicacy. It’s called Sinuso or deep-fried mammary glands. You can buy it at Aling Mameng Original Liempong Bocaue.

Aling Mameng was founded in the 1950s by Francisco Dela Cruz and his late wife, Aling Mameng (“aling” is an honorific title used to address an elderly female). The couple ventured into different businesses until they thought of working something with the pig’s mammary glands, which is usually discarded in the markets. The business went well until it closed due to the passing of his wife. But it was recently reopened by the Dela Cruz’ nephews, after being able to convince Francisco.

So how do I find this rare Bocaue delicacy? It is soft and bouncy. It’s really like lean meat but with a funky flavor, similar to liver. Frankly, it’s not for me.

Aling Mameng also specializes on its namesake delicacy, Liempong Bocaue (Bocaue-style deep-fried pork belly). This one is fatty and tender, and has crunchy skin. It’s best dipped in vinegar to counter the fattiness.

They also sell Chicharon Bituka or deep-fried pig intestines. This one is crunchy and juicy.

By the way, if you’re taking home the liempo and chicharron, try air-frying it. It tastes better!
